As I admit mention in my bio, I’m currently working as a pastry chef: despite having just started and still coming to grips with the job a bit (and generally being pretty wiped out come shift end), I’m so excited that I can’t yet confine all of my energy into just baking for a living.

I’ve decided then that in my copious spare time I will try new recipes, mostly desserts and general sweet dishes but with the occasional savoury intermission, and post short summaries on my blog. My (manifold) aim is to pick stuff that actually interests me, that involves techniques or ingredients I am not already familiar with, and that (possibly simplified or revised) I can propose as actual dishes to be served at my cafe.
